Soaked pinto beans last night. I am cooking them right now on the stove top. We’ll have them next week. I spiced the beans with 2t cumin, 1t chili powder, garlic powder, 1 c chopped onion and pepper. We reheat the beans and add chopped lettuce, chopped tomato, grated cheese, chopped onion, cilantro and any thing else that sounds good (and Mexican). I am also making steel cut oatmeal for breakfast. I got it for 59 cents a pound in Grabill and bought about 5 pounds. Just 1/2 cup makes breakfast for Eric and I. It’s filling, stays with us and is warm. Tonight we are having steaks at Lon’s. (actually I will be eating either hamburger, chicken or a pbj) Tomorrow is a get together for several friends of ours. Next weekend is the church bike picnic. It’s close to Lon/Lisa’s and they’ll ride their bikes over. Always a fun potluck.
I love a gas stove. I can work easier with the flames. I am trying to get the beans on a simmer. The RV sure smells good right now.
I haven’t seen Lon since he got back from his trip. So it will be nice to hear about it.
