Cleaning the Cupboards

Today I made tomato soup.  We bought a dozen beefsteak tomatoes at Costco to use with our Christmas and New Years breakfast. Our tradition is lox & bagels for the holiday breakfasts.  We had a lot of leftover tomatoes that were getting soft. This morning I made a batch of tomato soup.  Seeded the tomatoes but didn’t peel them. Added onion and celery, chicken broth, milk and spices.  It turned out to be a pretty good tomato bisque.   A bit chunky like a bisque should be. And we’ll get two lunches out of it.  A healthy bowl of soup using up some way past their date tomatoes.
