Felt like I learned something new today. I made a Ritz cracker pie and it is wonderful. On a scale of 1-10 it’s clearly a 10. For one thing it was easy to bake, the assembly took me all of 15 minutes. It was wonderful. I wish I had tried this pie years ago. My family loves pie and this would have been so easy to assemble. I used a Pillsbury Pie Crust. Placed it into the pie pan. I put 25 Ritz crackers in a baggie and sealed it. I took a rolling pin and crushed them fine. Then I put the crumbs in a bowl and added 1/2 c. brown sugar. Mixed it with my fingers. Then I added 1/4 cup melted butter and mixed it all together. Put it aside. Then I took 2 cups water, 2 teaspoons cream of tarter and 2/3 cup white sugar. Bring it to a boil. Add 30 Ritz Crackers. Do not break the crackers just put them in whole and don’t stir.. Simmer for 5 minutes. Remove from heat. Pour into the pie crust. Top with 3/4 teaspoon cinnamon and 1 tablespoon fresh lemon juice. Take the topping and put on top of the pie. Sprinkle with cinnamon and place pie into the oven at 400 for 15 minutes. Turn the temperature down to 350 for another 15 minutes. It smells wonderful and tastes wonderful.
